This salad came as a direct result of my zucchini with chickpea balls recipe. I had some sautéed zucchini leftover and decided to toss them into a salad. It’s really simple, especially if you have the zucchini already cooked, but even if you don’t, it takes almost no time at all.
- 1 green salad/lettuce
- 1 small zucchini
- 1 tomato
- 2 tbsp of olive oil
- Salt to taste
- Thyme to taste
- Wash and cut the lettuce and place it on a plate.
- Wash, peel and cut the zucchini into strips. Heat 2 tbsp of olive oil in a pan and toss the zucchini strips inside. Sprinkle with a pinch of salt and thyme. Sautee for a few minutes, stirring from time to time. Remove the zucchini from the pan once they’re soft and add to the salad.
- Wash the tomato and chop it into small pieces. Add it on top of the salad.
You wouldn’t need any additional seasoning since the zucchini will bring a pleasant herbal flavor to the whole dish.
If you want, you can also add some croutons 😉 They will make a great complement.
