This salad turned out SO good for me, I just couldn’t wait to share it! 🙂 I had some green salad in the fridge and was having a bit of a hard time deciding what to do with it. I didn’t feel like eating a boring salad at all, but then an idea struck me and I put it to action right away. The result was delicious! 😛 The special taste came from the way pepper, carrots and thyme mix together. I never thought it could be so good. Will definitely be making more of it! 🙂
- 1 green salad/lettuce
- 1 carrot
- 1 red pepper
- A handful of boiled or canned chickpeas (peeled)
- 2 tbsp olive oil
- 1 tbsp thyme
- A pinch of paprika
- Salt and pepper to taste
- Wash and chop the lettuce and put it in a plate.
- Wash the carrot and red pepper and cut them into strips. Heat some olive oil in a pan and toss the strips in it. I actually tossed the carrots in first because they’re slower to cook, and then added the peppers. Sprinkle some thyme on top of them, stir for a couple of minutes, then place the lid and let them stew for a few minutes. Once the veggies are tender, stir again and add them on top of the cut lettuce. Use a slotted spoon to remove the strips from the pan, so that the olive oil remains inside.
- Put the chickpeas in the remaining oil and sprinkle with some paprika. Stir until the chickpeas are heated through, and using a slotted spoon, remove them from the pan and place them on top of everything. Sprinkle with some salt and pepper and you’re done. Now it’s time to enjoy 🙂
